Organic cheese from hay milk

For Josef Höflmaier, cheese-making is a lot of manual work and passion at the same time. The family business (founded in 1931) processes up to 5,000 litres of organic hay milk per day from the almost dozen contract farmers in the surrounding area into hard cheese and semi-hard cheese as well as other dairy products. The cheese is produced from pure silo-free raw milk, without the addition of preservatives. The raw material for all products produced is organically obtained hay milk.
